Menu Planning Monday...on a Tuesday
It's been a while since I've made out a menu, but now that baseball season is over and school is about to begin, I'm trying to get back into our little routine.
Monday: Layered Enchilada Bake
Tuesday: Chicken Fingers, Mashed Potatoes, & Corn (Nate's pick)
Wednesday: Frozen Pizza & Side Salad
Thursday: Weenies & Kraut, Fried Potatoes, & Green Beans
Friday: leftovers
Not the best menu plan I've come up with before, but it's just nice to have a plan in place. Slowly but surely I'll get back into the swing of things.

Chicken Pillows
Unfortunately, I don't have a picture to share. I made these Saturday evening and it was late...I was hungry...so we devoured them before I could take a picture. Everyone loved this recipe, though. I will be putting this on my next Month Recipe List.

King's Cake
This weekend, I decided to try my hand at making a King's Cake. I used this recipe, but got my step-by-step instructions from Southern Plate. Pardon my purple sprinkles. I couldn't find any at the store, so I made my own and used too much food coloring...which made my sprinkles clumpy. :(
This was really quick and easy. Nate has been taking Home Economics at school as an elective, so he's been really interested in helping me cook. This was a great recipe to let him help with. He was able to do just about everything on his own. It was also a great opportunity for me to explain to him the tradition of the King's Cake.
I'll be honest. This wasn't my favorite recipe. Don't get me wrong...it was good...just not my favorite. I think it was the frozen bread. It made it more bread-y and less pastry-ish....which is what I prefer. I'll bookmark the recipe, though, just because it was so quick and easy and because Nate had such a good time making it.
Happy Mardi Gras!
